  • As a tool, we use it to describe a Flavor Profile and to
    quantify & graphically represent the Flavor Profile.

  • Combining descriptive flavor analysis and head space
    analysis (SPME), we have been able to identify the
    specific molecules responsible for the  flavor descriptors.
